Sunday Dinner


Josh and I talked about old family traditions and decided to come up with a new tradition of our own. Tonight was the first night of a new tradition: Sunday Dinner.  I made Jalapeno Ranch Chicken Tenders and Josh made his mouth-watering baked mashed potatoes with cheese. We both decided on a salad for a veggie (easy stuff).

I enjoyed watching Josh and my daughter eat, talk, and smile. In this world where there is no time for family, sitting down to a homemade meal with simple dishware and plastic serving trays warmed my heart more than a fancy dinner in an overcrowded Austin eatery.

Jalapeno Ranch Chicken Tenders

Ingredients

3 lbs chicken tenders 
1 c grated Parmesan cheese
2 c Panko bread crumbs
Salt and Pepper, to taste
1 c jalapeno ranch dressing (Spicy Ranch)
Cooking Spray 

Instructions

1. Preheat oven to 420 degrees. 
2. Cover baking sheet with foil and coat with cooking spray. 
3. Pour some jalapeno ranch dressing in a bowl.
4.Mix bread crumbs, cheese and seasonings in a shallow bowl.
5. Dip chicken in the dressing and then coat in the bread crumbs.
6. Place chicken tenders on the baking sheet and spray the top of the chicken tenders with cooking spray (I used olive oil).
7. Bake for 20 minutes. Flip chicken tenders and bake for an addition 20 minutes. 

And enjoy a great Sunday dinner with the people you love...
