I was browsing the Internet looking for recipes to use up the fresh cranberries left over from Thanksgiving Dinner. I decided to go with a Cranberry Cake recipe from The Kitchn.
The house smelled fantastic and the cake looked great once baked. I eagerly cut the cake, dolloped whip cream on top, and took a bite. I was disappointed.
The cake was too doughy and there wasn't enough cranberries, all I tasted was the almond extract. If I were to tweak the recipe, I'd leave out the almond extract, add more cranberries, and make the pecan topping thicker.
