I decided to bake something I can eat during the week before I leave for school. Coming out of a lithotrispy, I'm not too sure how I will feel after four hours of actively monitoring students during STAAR testing.
I figure a nice healthy breakfast will start the day off right. I have never liked oatmeal, but I enjoy oatmeal cookies. I thought baked oatmeal would have a cookie texture, but I was mistaken. The baked oatmeal has the same texture as regular oatmeal. I took one bite and that was enough. I don't necessarily consider the recipe a failure, just a misunderstanding on my part.
