Mini Vanilla Scones

I'm still on a scone kick. I made mini vanilla scones last night. They are fantastic! I'm definitely planning on baking more...maybe for school in the fall. The recipe is adapted from itsbakedin.


2 c flour
1/3 c sugar
1 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
8 tbsp unsalted butter, cold & cut
1/2 c nonfat vanilla greek yogurt
1 egg
1/2 teaspoon vanilla extract
Vanilla Bean Glaze
1 c confectioners’ sugar
1-2 tbsp soy milk
1/4 tsp vanilla extract

1. Preheat oven to 400 degrees. Mix flour, sugar, baking powder, baking soda, and salt in blender. Add butter and process until butter is combined and resembles coarse meal.
2. In small bowl combine, egg, yogurt, and vanilla extract. Add to dry mixture and mix just until blended.
3. Remove to a lightly floured surface and form a 3/4 inch thick square. Cut the square into four squares. Then, cut diagonally for a crisscross with all four squares.
4. Place on a cookie sheet lined with a baking sheet about 1 inch apart. Bake until lightly golden, about 10-12 minutes.
5. While scones are cooling make the glaze. Combine 1 cup of confectioners’ sugar with soy milk, and vanilla extract. Spoon the tops of each scone to coat top.
