Greek Pasta Salad


Joshua's parents came to visit over the weekend. Joshua made Neiman Marcus Dip for an appetizer and for dinner he made delicious hamburgers. To accompany the hamburgers he made pasta salad instead of french fries. The pasta salad, he found on joythebaker, was fantastic! The Greek Pasta Salad sits high on our favorite recipe list!


Ingredients

Dressing:

1/3 c olive oil
Juice from 1 lemon
1 tbsp minced shallots
2 tsp Dijon mustard
2 tsp honey
sea salt and fresh cracked black pepper to taste

For the Pasta Salad:

5 c cooked orzo pasta (1 package-dry)
2 c de-seeded and coarsely chopped cucumbers
2 c halved cherry tomatoes
1 heaping cup crumbled feta cheese
1/2 c thinly sliced red onion
1/3 c chopped fresh basil

sea salt and fresh cracked black pepper to taste

Instructions

1. In a medium mason jar combine olive oil, lemon juice, shallots, mustard, honey, and a pinch of salt a fresh cracked black pepper.  Secure the lid tightly and shake vigorously until emulsified.  Taste and season with more lemon, honey, salt, or pepper as necessary.  Set aside.

2. In a large bowl toss together orzo pasta, cucumber, tomatoes, feta cheese, onion, and fresh basil.  Season lightly with salt and pepper.  Just before serving, drizzle in the dressing. Taste and season accordingly.  Chilled the salad for a couple of hours and serve. It can also be served immediately after tossing with the dressing.
